Avocado Cashew Dressing



Ingredients:


1/4 cup water
1/4 cup raw cashew pieces
1 avocado
Juice of 1/2 of lemon
1/2 tsp sea salt (lower sodium content)
1/2 tsp dill weed
1 clove of garlic (or tsp garlic powder)
1/4 small onion (or tsp onion powder)
can sprinkle pepper in to taste preferences
1 cup water (+/-)


Directions:


Add the 1/4 cup of water and cashew pieces to Nutribullet or food processor to blend and pulverize together.  Mix until mostly smooth.
Add remaining ingredients, adding water in smaller quantities at first (around 1/4 at a time).  Blend, being sure to scrape down ingredients from the side if applicable. If too thick, add more water and repeat.  Taste as you go.  You may continue to add water and seasonings to your desired taste and texture.
Note: Consistency will be a light, airy, creamy and whipped texture, so be careful not to add too much water trying to liquefy it.  Put into the fridge to settle and chill.

TO DO:  create a monster salad with all of your favorite fresh fruit and vegetable munchie combos and top with your new dressing!  ENJOY!!
