Coconut Whipped Topping

Ingredients:


2 cans of full fat organic coconut milk (do not shake, as you will only be using the milk solids formed on top)  
1-2 tablespoons dry sweetener (coconut crystals, turbinado, vegan organic sugar cane, evaporated cane sugar, you get the idea)

Directions:


Skim the milk solids from 2 cans of organic (full fat) coconut milk and put into a deep good sized bowl.

Add your desired quantity and type of sweetener, but make sure it is a dry sweetener so to coconut milk whips easily.



Mix in the bowl with a fork or spoon, just to get the dry mixed into the wet before blending.

Using an electric hand mixer, whip until fluffy (you may use the regular beater attachments, they work fine, mine were in the dishwasher).


Fast, easy and super delicious!
