Sloppy BBQ Cauliflower

Ingredients:


Cauliflower mix ingredients:

1 head(s) (medium) uncooked cauliflower, Shave the top bits off for use in this recipe.(Chop the leftovers and freeze for use later in soups etc.)
10 medium uncooked scallion(s), Use white part and about 1/3 of the green
2 Tbsp Nutiva Coconut Oil, Organic Extra Virgin
  
BBQ Sauce:
1 Tbsp black strap molasses  
1/4 cup(s) pure maple syrup  
2 Tbsp Tamari sauce (soy sauce)  
2-3 Cups Hunts Tomato Sauce (add as much or as little as you like for the desired consistency)  
6 oz Hunts Tomato Paste  
2 tbsp Smokey Marinade
2 tbsp Coconut Secret Coconut Vinegar, Raw (you could probably use any vinegar you have on hand)

Directions:
Cauliflower Filling: Cook on stove top. Put coconut oil in warm skillet and melt, add shaved bits of cauliflower, scallions and about a cup of water and cook until tender/al dente. I added salt, pepper and garlic powder as well.

BBQ Sauce: Cook separately on stove top. Add tomato sauce, paste, vinegar, Tamari (soy sauce), smokey marinade, molasses and maple syrup and cook until desired taste. I also added minced dried onions, pepper and garlic. You can mix together and serve that way or dip out the cauliflower and top with the sauce. Add a bun with your favorite toppings and side dishes and you're ready to go! Quick, easy and healthy!! ENJOY
