Creamy Melt In Your Mouth Peanut Butter Fudge Bites

Ingredients:

1/2 cup coconut oil (pure raw organic)
1 Tbsp pure maple syrup
1 Tbsp pure vanilla extract
2-4 Tbsp unsweetened plant milk (I used cashew)
1/2 cup unsweetened peanut butter
1-2 cup confectioner's sugar (the powdered stuff)

Directions:

Add together in a deep bowl (it is important that you use a deep bowl or you will have a sticky mess!): coconut oil, maple syrup, vanilla and 1-2 Tbsp of plant milk.  Smash together until lumpy creamy.

Work the peanut butter into the mix with a fork or spoon scraping ingredients from the sides and working into the mix.

Stir in the confectioner's sugar and add 1-2 Tbsp of plant milk working until creamy enough to use a hand beater and blend until creamy.  (The amount of sugar is entirely up to you for taste and texture.  I used less and it took over night before they set perfectly.) Yes, you may still have some small bits of coconut oil, that's okay, they will melt in your mouth and you can blend as much or as little as you would like.

Pour/scrape into a ceramic or glass dish and put in the freezer to set.  Once firm enough to cut, cut into bite size pieces and put back into the freezer to get firmer.  Once you are able to cut and remove them from the dish, take out the pieces you have already cut into perfect little bite size pieces and put back into the dish in a way so they can be easily removed to munch on.  I like to stack them a bit.  Cover the dish and keep in the freezer.  Or you can put the bites into a freezer bag.  They store very nicely.  Nibble when the urge hits you.  These are scrumptious, delectable, little, bite size pieces of melt in your mouth joy and are a perfect pre-run treat!  (But watch how long you keep them out, coconut oil softens when exposed to warmer temps.  They will melt in your mouth AND in your hands!)

These are not quite set yet, but they are already delicious.  They will be perfect by morning!


Note:  You may enjoy adding crushed bits of nuts into your fudge after the final blending, just stir them in and finish out the same way.  You can substitute cocoa for the peanut butter and add more confectioner's sugar if you want it sweeter. There are so many things you can do with recipe.  I made a variation of this and used it as chocolate fudge icing on raw brownie bites, delicious!
